Ey Ey Ey Chicken

This was my "What's Cooking" chat room inspired Chicken Dish. I gave my Fellow nesties the mission of what should i make with Chicken, Limes, Tomatoes, and a Jalapeño and boy did they come through! they totally inspired me to make a Mexican party in my kitchen! And i have to say it wasn't bad! Quite yummy actually... next time though i think I'm going to try to give it more kick!

Ingredients
3 boneless, skinless chicken breast
2 Tbsp Olive Oil
1-2 shots of Tequila (depending on how you're feeling!~)
1 tsp of cilantro (more if you have fresh, i didn't~)
1 tbsp of lime juice
some zest of a lime (not too much)
salt and pepper to taste
1/4ish tsp of cumin
1/4sh tsp basil
1/4 c chopped tomato
1 tbsp chopped jalapeño
1/4 c chopped onion

Fresh Salsa (amounts depend on quantity you want to make)
2 Tomatoes, seeded and chopped
1/2 jalapeño seeded and chopped
1/2 onion chopped
1 tsp fresh lime juice
1/4 tsp red pepper flakes

reduced fat Mexican shredded cheese

Take the first nine the chicken ingredients and cook in a large skillet over medium heat until chicken is at least half way cooked. Then add final three ingredients and cook until chicken is fully cooked.

Take chicken breast and put on plate, top with as much cheese as you would like and then top with Salsa and enjoy!

This was our dinner on Monday night! Steak, marinated in a Jack Daniel's Mesquite sauce, Sweet Potato French Fries, and Salad.
The salad is rather "normal" where it's from a bag, has cheese and salad toppers on it.

Ahhh but the Steak and Sweet Potato fries were amazing! YUMMM

Just the right side! Thanks to Katie I knew what I wanted to eat with my Steak and how good it was too! You don't need anything to dip these tasty treats in, but Chris still loved dipping in Vinegar, he's all Maryland!

Sweet Potato Garlic Fries

Ingredients:

5 large red-skinned sweet potatoes (yams)
2 Tbsp olive oil
salt and pepper to taste
2 Tbsp kosher salt
5 large garlic cloves, minced or pressed
1/8 c. flat leaf parsley, minced

Directions:
-Preheat oven to 500 degrees and line 2 baking sheets.
-Wash and dry sweet potatoes (leaving skin on) and slice into 1/8 inch thick wedges.
-Place into large bowl and combine with olive oil and a generous sprinkling of salt and pepper.
-Lay out sweet potato wedges on baking sheets, dividing evenly between them, and place in oven.
-Bake for 30 minutes, turning occasionally, or until edges begin to brown and wedges are tender.
-Remove from oven, sprinkle evenly with salt, garlic, parsley, and serve immediately.
Juicy and Delicious!
This was Chris's idea, while we were grocery shopping he came across a marinade bag of this Jack Daniel's sauce and it was amazing!

Preheat oven to 450. Drizzle Dressing over fish and cook frozen fish uncovered for twenty five minutes.
Then top with mushrooms then Cheese and lastly with the Parsley.

Shish ke babs!

What a yummy healthy hit!!! This is the easiest recipe to do and is so GOOD for you! Thanks to our friends Tuck and Martiena for the inspiration!

Prep work on this is everything and will make your BBQ so much more!

We used, low fat sausage, chicken breast cut up and marinated in teriyaki(not Gluten free) sauce, deer tenderloin (hey my husbands a hunter) marinated in mesquite(not Gluten Free) sauce, shrimp with old bay seasonings and potatoes, onions, and bell peppers.

First with the potatoes and veggies you'll want to slice them and pre-cook them in boiling water... just to where they are barely tender.
Then mix the potatoes in butter, salt and pepper.
Put a little salt and pepper on the onions and bell pepper.

Cut up you chicken and red meat into 2" pieces and marinate them in the fridge. Slice your sausage and i bought pre-cooked shrimp but you don't have to, just season them how you like.

About 30 or so minutes before you want to cook put everything on a skewer and put in the fridge to wait until you decide to cook... little hint, put your shrimp on its own skewer since they cook much faster then the other meat!

Enjoy!!!
